Instructions: Place grated zucchini in a clean kitchen towel and squeeze out excess moisture. In a mixing bowl, combine zucchini, breadcrumbs, Parmesan cheese, parsley, onion, beaten egg, salt, and pepper. Mix well to form a mixture. Divide the mixture into 4 equal portions and shape them into patties. Heat olive oil in a pan over medium heat. Cook zucchini patties for about 4-5 minutes on each side or until they are golden brown and cooked through. In a small bowl, mix Greek yogurt, lemon juice, and garlic powder to make a sauce. Cut pita bread rounds in half to form pockets. Stuff each pita pocket with a zucchini patty, lettuce leaves, sliced tomatoes, and a drizzle of the yogurt sauce.
