Cinco de Mayo is right around the corner and one of my favorite condiments for tacos, and pretty much anything else is pickled red onions. This link will not charge you extra but it does add a bit of coin to my pocket. https://amzn.to/3uaKjsG https://amzn.to/3eQ9SJ9 Pickled Red Onion Ingredients: 1 cup Red Wine Vinegar 1/3 cup sugar 1/4 teaspoon salt 6 - 8 black pepper corns 2 large cloves garlic, smashed and quarted 2 jalapeΓ±os, halved, seeded and ribs removed, sliced 1 large red onion, halved and cut into 1 inch half moon. Directions: 1) Bring red wine vinegar though jalapeΓ±os to a boil over medium heat, stirring often to devolve the sugar into the mixture. 2) Pour hot liquid over red onions. 3) Let sit for half an hour before using or refrigerating.
