Ingredients: 1 cup all-purpose flour. 1 cup cornmeal. 1/2 teaspoon salt. 1 teaspoon baking powder. 1/2 cup warm water. 1 pound ground beef or ground turkey. 1 onion, finely chopped. 1 red bell pepper, diced. 1 can 15 oz pinto beans, drained and rinsed. 1 cup shredded lettuce. 1 cup diced tomatoes. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped fresh cilantro. Vegetable oil for frying. Salt and pepper to taste.
Instructions: In a mixing bowl, combine the all-purpose flour, cornmeal, salt, and baking powder. Gradually add warm water and knead the dough until it's smooth and elastic. Cover and let it rest for 30 minutes. Divide the dough into small portions and roll them into balls. Flatten each ball into a thin round disk tortilla shape. Heat vegetable oil in a deep skillet over medium-high heat. Fry the dough disks until they puff up and turn golden brown, then flip and cook the other side. Remove and drain on paper towels. In a separate skillet, cook the ground beef or turkey over medium heat until browned. Add chopped onion and red bell pepper, and saut until the vegetables are soft. Stir in the pinto beans and cook until heated through. Season with salt and pepper to taste. To assemble Navajo Tacos, place a fried dough disk on a plate. Top it with a generous portion of the meat and bean mixture. Add shredded lettuce, diced tomatoes, cheddar cheese, sour cream, and chopped cilantro on top. Serve the Navajo Tacos hot and enjoy!
