I may be a few days late with our whiskey of the week, but don't imagine I haven't been drinking this regularly. The pictures in the background were taken at what I guess is Oak Street Beach, although we were pretty close to the underground walkway at the end of Division. There were several cyclists going by, and since I'm proposing to @morganstell , one of them yelled, "say yes!" That was nice of her and Morgan listened to the cyclist. Since that time we have been married for over four years and added a new love of our lives in addition to each other! @fiverberry loves to pose for pictures and is a great smiler! I let the girls hold up our favorite whiskey for the week. Honestly, this is the best whiskey I have had this year, and maybe in a few years. It is nice to try something that simply stands out. @kovaldistillery Four Grain is smooth and delicious. I have to think what grain is sticking out the most and I feel that is is so well rounded that I don't have the pallet to address it. I just know what is unique and tastes perfected. This is it. A Chicago distillery...and when I was trying to decide between the two bottles in my favourite liquor store I shot out an email to Koval to ask their recommendation based on the stated barrel number. The distiller and VP emailed me back within the day to give his recommendation. Props to you Mark and the Koval family. I was really impressed by the promptness and willingness to respond...but most impressed by this delightful whiskey you all made! Did I mention they use organic grains and have many sustainable practices!? This is rare, almost unheard of, concerning distilleries, so that is a big win in my family's book.
