These indulgent bars combine the rich flavors of chocolate and mint with the sweetness of dates and the crunch of almonds, all topped with a creamy matcha coconut butter filling. Plus, they're no-bake, making them a quick and easy treat!
Ingredients: 1 cup Medjool dates, pitted. 1 cup almonds. 1/4 cup cocoa powder. 1/4 cup shredded coconut. 1/4 cup dark chocolate chips. 1/2 tsp peppermint extract. 1/4 tsp salt. 1/4 cup coconut oil, melted. 1/4 cup coconut butter. 1 tsp matcha powder.
Instructions: In a food processor, combine dates, almonds, cocoa powder, shredded coconut, dark chocolate chips, peppermint extract, and salt. Pulse until mixture is finely chopped and sticks together. Press mixture firmly into a lined baking dish, creating an even layer. Place in the refrigerator to set. In a small bowl, mix together melted coconut oil, coconut butter, and matcha powder until well combined. Spread matcha coconut butter mixture evenly over the chilled date nut layer. Return the dish to the refrigerator and chill for at least 2 hours, or until firm. Once set, remove from the refrigerator and cut into bars or squares. Serve chilled and enjoy!
