Nanaimo Bar Bites (No-Bake)
The ultimate Canadian no-bake treat, now in perfect pop-able form. 🇨🇦 These three-layer bites have a coconut-graham crust, a rich custard buttercream middle, and a smooth chocolate top. They're decadent, sweet, and require zero oven time. So good, eh?

½ cup (1 stick / 113g) unsalted butter
¼ cup (50g) granulated sugar
⅓ cup (35g) unsweetened cocoa powder
1 large egg, lightly beaten
1 ¾ cups (175g) graham cracker crumbs
1 cup (90g) unsweetened shredded coconut
½ cup (60g) finely chopped walnuts or almonds
For the Middle Custard Layer:
¼ cup (57g) unsalted butter, softened
2 tbsp heavy cream or whole milk
2 tbsp custard powder (like Bird's) or vanilla pudding powder
2 cups (240g) powdered sugar, sifted
For the Top Chocolate Layer:
4 oz (115g) semi-sweet chocolate, chopped
1 tbsp (14g) unsalted butter
Prepare the Base Layer: Line an 8x8 or 9x9 inch pan with parchment paper, leaving an overhang for easy removal.
In a heatproof bowl set over a pot of simmering water (double boiler), melt the ½ cup butter with the sugar and cocoa powder, whisking until smooth.
Gradually whisk in the beaten egg until the mixture thickens slightly (about 2-3 minutes). Remove from heat.
Stir in the graham cracker crumbs, coconut, and chopped nuts. Mix until well combined.
Press this mixture very firmly and evenly into the bottom of the prepared pan.
In a medium bowl, use an electric mixer to beat the softened ¼ cup butter, cream, and custard powder until light and fluffy.
Gradually beat in the sifted powdered sugar until a smooth, spreadable frosting forms.
Spread this layer evenly over the hardened base layer. Chill in the refrigerator for at least 1 hour to set firmly.
Create the Chocolate Top Layer:
In a clean double boiler (or microwave in 20-sec bursts), melt the semi-sweet chocolate with the 1 tbsp of butter, stirring until completely smooth.
Let the chocolate cool for a few minutes so it's not piping hot, then carefully pour and spread it over the chilled custard layer.
Chill to Set: Return the pan to the refrigerator for at least 1-2 hours, or until the chocolate top is completely firm.
Slice into Bites: Use the parchment paper to lift the entire square out of the pan. Use a sharp knife to slice it into small squares or bars. For the cleanest cuts, dip your knife in hot water and wipe it dry between slices.
