I made a gingerbread loaf out of rye, ragi, teff, and oat flour, roughly equal proportions by volume. It is cooling and I'm excited to try it.
This is my first baked good in this Pyrex loaf pan I picked up for $4 in a discount store. I'm inexperienced baking in glass loaf pans, having only used metal before, and am curious what challenges & benefits glass will bring.
Being the way I am, I skipped wheat flour and opted for a full-on multigrain experiment with four "weird" flours for the first run. I have abandoned using wheat as my reference flour. I now approach grains as equals and am comfortable wrangling with unusual mixes of flours, using whatever I happened to have on hand. I also got teff and oat at the same discount store, and I already had ragi and rye open and want to use them up, so that's what went in this one!

Tried baking a multigrain loaf for the first time.
It’s my mom’s favourite type of bread but it’s gotten so pricey in our shops that I decided to see if I could make it at home instead.
It tastes really good, but I can definitely make a better loaf than this.
