I found some morels today! So I made a risotto with dried bolete mushrooms (porcini and others) I found last summer and morels on the side. Vegetarian.

take some cooked brown rice (like maybe 1/2 cup? not alot), cook it with some veggie stock, herbs, and finely minced/grated mirepoix (onion, carrot, celery), let it cook down and deglaze with a bit of white wine/sherry, mix in vegan cheese/nooch, put inside mushrooms, bake until soft
