spicy & creamy lentil kale soup

Dice 1/2 an onion and 2 peeled carrots, saute in a tsp of olive oil until soft (about 5 mins). Add in 1/2 cup of lentils (i used green) and 2 cloves / 1 tbsp of minced garlic, a couple dashes of: thyme, curry powder, garam masala, turmeric, cumin, black pepper, and half of a chopped large tomato or a whole small tomato - stir for like 30 secs. Then, add about 3 cups of water or vegetable broth. Bring to a boil, cover, reduce to a simmer, and let cook for about 25 mins. Make sure it doesn't reduce too much. Add in a fistful of de-stemmed kale and/or spinach and cook it down until soft. You don't want it to be watery or curry-like, but like a thick stew. Top it with a tbsp of nutritional yeast and stir in a generous dollop of vegan yogurt or sour cream. Salt to taste.
note: if you don't have these herbs/spices, take a tiny portion of the finished soup and add a little of what you've got, one at a time, and figure out what would taste good with what you've got. It would probably taste good with garlic / onion powder, paprika, ginger, or even cinnamon.
