Today’s Weight (5.1.19):  202.2
Total Weight Lost in 1 Week: 3.9 pounds??? Total Weight Lost in 1 Year: 43.5 pounds Total Weight Lost in 1.8 Years:  57.8 pounds
To be fair, last Wednesday’s weight was a random high glitch but it doesn’t take away how happy I am to see a new lowest weight today!! Slowly but surely, chipping away to 199!
Ohmygosh guys, I HAVE to tell you about Monday’s dinner. I made Ruled.Me’s, “Spicy Peanut Tofu Lettuce Cups” but omitted the tofu and made it with chicken thighs because duh. It was so peanut buttery deliciously smooth and tasty that I was literally licking every surface that touched the sauce. If you’re in the mood for something like this I HIGHLY encourage you to make it. It really wasn’t challenging to make at all, the longest part was cooking the chicken. Â
Tuesday was another blazer / event day where we were fed a stock meal that was pretty sad. The balls on the organizer who decided to serve hundreds of people beef and seafood despite how many people don’t eat red meat or shellfish. Like woah. AND to top it off, the food wasn’t executed well. I only ate the salad, the tiny medallion of beef and while I had a bite of the shrimp it tasted questionable so I just left it alone but ate the sad green beans because I was hungry. I heard the mashed potatoes were a cold hard clump and the only saving grace to the meal looked like the apple pie cheesecake smothered in caramel sauce. I’m sure it was great! Â
Dinner last night was sous vide pork chops with the world’s largest asparagus spears (thanks Costco) and I made a mayo/dijon sauce to go with it. Not too shabby! This wasn’t on my meal planning list but we’re starting to have an abundance of meat in our freezer so this was my attempt to start to work our way through it. Â
Love that the first day of the month corresponded with Weigh-In-Wednesday! All the weight loss stats today! Super proud of my effort last month, which is interesting given that April 2018 is when I started putting in serious effort towards my weight loss goals. Historically, April is usually when I start tapering off effort given that I usually get side tracked by my birthday in late March and just continue to not exercise or eat right. I definitely like this new pattern! Â
Pretty damn exciting that if all goes well and I keep up this effort that I’ll see below 200 this month!! Eeeee!

I also stole/borrowed my mom's old stationary bike, so I'm going to try and use that for 30 minutes a day five days a week. I don't currently exercise, so I'm hoping maybe that'll encourage more weight to come off. lol.
Not too bad! I felt like this month was slow going, but still a decrease in weight, so no complaints from me. I weighed in today, and won't do so until next month. It's going to be weird, but I'm determined to stick with No Scale September. Just going to focus on eating well, and we'll see how it goes!
