Ingredients: 1 cup gluten-free all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1 teaspoon vanilla extract. Cooking oil for the griddle.
Instructions: In a mixing bowl, whisk together the gluten-free all-purpose flour, sugar, baking powder, baking soda, and salt. In another bowl, beat the egg and then add the buttermilk, melted butter, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay. Heat a griddle or non-stick skillet over medium heat and lightly grease it with cooking oil. Pour 1/4 cup portions of the pancake batter onto the hot griddle. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter, adding more oil to the griddle as needed.
