The floral lavender and zesty lemon flavors in these Iced Lavender Lemon Shortbread Cookies are a perfect match. A sweet and tangy icing complements the delicate shortbread texture.
Ingredients: 1 cup unsalted butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1 tablespoon dried culinary lavender buds. 1 tablespoon lemon zest. 1/4 teaspoon salt. For the icing:. 1 cup powdered sugar. 2 tablespoons lemon juice. 1 teaspoon dried culinary lavender buds.
Instructions: Melt the butter and mix it with the powdered sugar in a bowl until the mixture is light and fluffy. Mix the salt, lemon zest, and dried lavender buds into the butter. Mix everything together well. Add the all-purpose flour slowly while mixing the ingredients together until a dough forms. Make a log out of the dough and cover it with plastic wrap. Put it in the fridge for at least an hour to make it firm. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Cool the dough, then cut it into rounds that are 1/4 inch thick. Place the rounds on the baking sheet that has been prepared. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are just beginning to turn golden. Get the icing ready while the cookies cool. Put the powdered sugar, lemon juice, and dried lavender buds in a small bowl and mix them together. Spread the icing over the cookies once they are completely cool. Wait until the icing is set before you serve it. Have fun with these tasty iced lavender lemon shortbread cookies!
