was chopping up a bunch of habañero peppers, prepping for habañero jelly
decided there was enough to make a jar of fermented hot sauce
with habañero, ghost chilies, serrano peppers, fresno jalapeño, yellow onion and a bunch of garlic
all in a 5% brine
this will ferment for about three weeks, then like the big batch of pepper sauce i'll drain it and blend it
this will be more of a deliberate "hot sauce" condiment - the big batch can be used as a condiment as well but it's also going to be pepper concentrate for other dishes - so i may add a hint of honey and a dash of vinegar to this and blend it smooth

Seriously winning: fermented chilli sauce update. This one has been on the ferment since the 20th. I gave it a sample and a bit of blend (I did wish it to be a wetter sauce but it's going to have to stay chunky; it wouldn't blend!) Verdict: this is basically the best ferment I have done so far. Not too salty, not to hot, tangy and with little cumin-seed zings every now and then.
