Did some more experimenting! It’s been nearly a month since I started on the two test jars of sauerkraut(front row), and just started on three more(back row). The originals have been a success! No mold, no bursting, souring with time, and no signs of going rancid. Those just had caraway as a seasoning, but these three new ones have caraway and dill. There is some color difference I can see between the test batch and this fresh batch as well. I’ll take more pics another day lol

Note: the first week is when the kraut produces the most excess brine. If you don’t have one of those water-lock crocks, and you keep the lids on loosely, the jars will overflow some to relieve the pressure from the fermentation gasses. Just place the vessels of kraut on towels, like this. Then it’s easier to clean up the leakage
