Did someone say vegan vegetable soup for dinner!!! Such a hardy meal and a great way to βclean outβ your fridge. Meaning all the veggies left overs can be used inside your veggie soup π For this soup I used veggie broth, chopped veggies I usually suggest use your favorites. I used zucchini, bell peppers, carrots onion, celery, etc... I like to stir fry the seasoning first with onions, celery, and the peppers a bit in olive oil then add the vegetable broth slowly let it bowl then add the rest of the veggies as salt and pepper to taste ππ Rica sopa de vegetales!!
