As promised, last night's post-run, post-forage, post-mow supper. I used a hybrid of techniques from CI and CC to season and smoke a small, organic pork shoulder roast. The wood is from an ash tree that came down in a recent storm. The knishes are filled with cauliflower and wild scallion puree. Roasted Baby Romaine Salad. The dressing is a mustardy, lemony, vinaigrette with some shallot and chopped rhubarb, and good olive oil. Slathered on halved lettuces and sprinkled with Seriously Sharp Cheddar, 8 minutes in a 375° oven melts the cheese and barely wilts the romaine.
