Ingredients: 1 whole chicken about 4-5 pounds. 6 tablespoons unsalted butter, softened. 4 cloves garlic, minced. 2 tablespoons chopped fresh herbs such as thyme, rosemary, and parsley. 1 teaspoon salt. 1/2 teaspoon black pepper. 1 lemon, sliced. 1 onion, quartered. 2 carrots, chopped. 2 celery stalks, chopped.
Instructions: Turn on your oven and heat it up to 425F 220C. Melt the butter and add the minced garlic, chopped herbs, salt, and pepper to a small bowl. Use paper towels to dry the chicken. Slide your fingers under the chicken's skin to loosen it up, being careful not to tear it. The garlic herb butter should be spread all over the chicken, even under the skin. Lemon slices, onion quarters, carrots, and celery should be put inside the chicken. If you want, you can tie the legs together with kitchen twine.
