I have a theory that George never had feelings for Sk prior to that episode. They may have had one encounter, but George didn't think much about him. He knew Sk, just not the fact Sk liked him. I think the reason why George was flustered at the fact that Sk liked him was the thought of SOMEONE liking him, having a crush on him. So maybe George doesn't know Sk very well himself, and his mind is just like. "Okay let's see where this takes us..." Still don't like the ship but I'm making headcanons to make it a tad more realistic and a deeper look on their last minute "chemistry"

I feel like George has high standards when it comes to romance. I have a headcanon George was that one friend where if someone liked Eliza or Jane, they'd talk to George first and use him as a messenger for that person to express their feelings for Jane or Eliza. It was never someone actually liking him in that way, not that George minded but it took him by surprise.

This may explain why we don't see them hanging out in the background, let alone uttering a single word to each other. I heavily doubt we'll get updates on them but who knows.

Justification:

"Jane and George literally love Eliza SO MUCH and it shows. Jane and George willingly pamper her and help her get ready at the creek, George was even ready to attack Craig with a comically large hammer with no hesitation when Craig saw Eliza without her usual clothing. AND GEORGE DOING HER MAKEUP?? I'M IN HEAVEN.

And look at Eliza's outfit in Silver Fist Returns, SHE'S MATCHING GEORGE. He totally designed her outfit for her.

It's often said that Eliza only likes what Jane and George do for her, but if we pay close attention we can see how much she cares for them. In Stink Bomb, at first Eliza is very stubborn in moving from the Willow Tree, but once she sees George become affected by it, she agrees. And Eliza literally calls Jane her favorite, there's nothing straight about that. She loves them and they love her.

And you CANNOT tell me, these three would be THE BEST villian couple in the creek. This is literally them:
