Frixuelos Asturianos are traditional Spanish pancakes from the region of Asturias. They are thin and delicate, often served with a dusting of powdered sugar. These pancakes are perfect for breakfast, dessert, or a sweet snack.
Ingredients: 2 cups all-purpose flour. 2 cups whole milk. 3 large eggs. 1/4 cup sugar. 1/4 teaspoon salt. 2 tablespoons butter, melted. Zest of 1 lemon. Vegetable oil for frying. Powdered sugar for dusting optional.
Instructions: Whisk the flour, sugar, and salt together in a large bowl. Beat the eggs in a different bowl, then add them to the flour mix. Combine well. Slowly add the milk while stirring all the time to keep the mixture from getting lumpy. Melt the butter and add the lemon zest to the batter. Mix the ingredients together until the batter is smooth. Put a nonstick frying pan or skillet over medium-high heat and lightly oil it with vegetable oil. To make the bottom of the pan even, pour a small amount of the batter into it and swirl it around. As soon as the bottom starts to turn golden brown and the edges begin to lift, the food is done. With a spatula, flip the frixuelo over and cook the other side for another minute or two, until it is golden brown and fully cooked. Move the frixuelo to a plate to cool down, and then repeat the process with the rest of the batter, adding more oil to the pan as needed. If you want, you can sprinkle powdered sugar on top of the frixuelos after they are all done cooking. Feel free to serve the Frixuelos Asturianos hot and enjoy!
