Muddy Buddies [Midnight Munchies]
Got the munchies?  Here’s the great unhealthy alternative midnight snack.  I first learned about these delectable little things during a training session when I worked as an Orientation Leader.  Since then, I’ve made them every summer.  They are a great snack to have out for guests to munch on during your next house party or picnic AND they are easy to make.
Ingredients:
9 cups Corn Chex®, Rice Chex®, Wheat Chex® or Chocolate Chex® cereal (or combination)
1Â cup semisweet chocolate chips
1/2Â cup peanut butter
1/4Â cup butter or margarine
1Â teaspoon vanilla
1 1/2Â cups powdered sugar
Directions:
Into large bowl, measure cereal; set aside.
In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
