After reading Death & Co cover to cover for the second time, I remembered how easy it is to stroll over to the liquor cabinet and play a game of Mr. Potato Head. As long as you have some idea of flavor profiles, complementary ingredients, and ratios, you can make some fun stuff. This cocktail is the result of this line of thought. Think of it as a Manhattan of sorts, with gin in place of rye, Dolin Blanc in place of sweet vermouth, maraschino to add a hint of complexity and sweetness, and grapefruit bitters to add some citrus and bitterness to ensure the maraschino doesn't overpower. It worked like a charm - boozy, herbal, and a hint of sweetness. We'll call it the Kaplan, in honor of the Death & Co founder who has inspiried it, to some degree.
