With this delicious coffee cake, you can enjoy the full flavors of coffee, sweet dates, and crunchy walnuts. The espresso glaze gives it an extra flavor that coffee lovers will love.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup unsalted butter, softened. 2 eggs. 1 tsp vanilla extract. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup sour cream. 1/2 cup chopped dates. 1/2 cup chopped walnuts. 1/4 cup strong brewed coffee. For Espresso Glaze:. 1 cup powdered sugar. 2 tbsp strong brewed espresso.
Instructions: Preheat your oven to 350F 175C and grease a 9x9-inch 23x23 cm baking pan. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, and beat until well combined. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and brewed coffee, starting and ending with the dry ingredients. Mix until just combined. Stir in the chopped dates and walnuts. Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the Espresso Glaze by whisking together powdered sugar and brewed espresso until smooth. Once the cake is done, let it cool for a few minutes in the pan, then drizzle the Espresso Glaze over the top. Allow the glaze to set before serving.
