Visiting the parents for the weekend, I decided to be daughterly and arrive home bearing gifts of the cakey variety. I elected to bake something a bit more grownup than usual - a classic date and walnut loaf.
This recipe is terribly easy, however it does take a bit of time. I hadn't read the method properly (a bad habit of mine) and didn't realise I had to let the boiled honey, water, date and walnut mixture completely cool before going in the oven. I had to resort to sticking the saucepan in the freezer in an attempt to jog the process along. The baking time is also fairly long - a full hour. Luckily this tasty loaf is worth the wait.
Just to mention, I didn't have enough pecans so used extra walnuts instead. This recipe actually make two loaves so I left one behind for the boyfriend to feast on in my absence. My picky dad seemed to like it so I think it's a winner! Best of all, this recipe contains no sugar whatsoever - all the sweetness comes from the sticky dates and honey, resulting in an irresistibly moist loaf.Â
N.B. try warming it up in the microwave and serving with a scoop of vanilla ice cream or fro-yo. When hot, the cake goes all gooey and sticky toffee pudding-esque! Yum!
