These Curry Hummus Detox Sandwiches taste great and are good for you. The fresh vegetables give it a satisfying crunch, and the creamy curry hummus gives it a flavorful punch. Great for a quick and healthy snack or lunch!
Ingredients: 1 cup chickpeas, drained and rinsed. 2 tablespoons tahini. 2 tablespoons lemon juice. 1 teaspoon curry powder. 1/2 teaspoon cumin. 1/4 teaspoon garlic powder. Salt and pepper to taste. 8 slices whole grain bread. 1 cucumber, thinly sliced. 1 large carrot, grated. 1 cup baby spinach leaves.
Instructions: In a food processor, combine chickpeas, tahini, lemon juice, curry powder, cumin, garlic powder, salt, and pepper. Blend until smooth to make the curry hummus. Toast the slices of bread until golden brown. Spread a generous layer of curry hummus onto each slice of toasted bread. Layer cucumber slices, grated carrot, and spinach leaves on top of half of the bread slices. Top with the remaining slices of bread to form sandwiches. Slice each sandwich in half and serve immediately, or wrap in parchment paper for later.
