Ingredients: 1 cooked chicken breast, shredded. 1/4 cup diced cucumber. 1/4 cup diced tomatoes. 2 tablespoons sliced black olives. 2 tablespoons crumbled feta cheese. 1/4 cup hummus. 4 slices whole wheat bread.
Instructions: In a bowl, mix shredded chicken, cucumber, tomatoes, black olives, and feta cheese. Spread hummus on one side of each slice of bread. Divide the chicken salad mixture evenly between two slices of bread. Top each with the remaining slices of bread to form sandwiches. Cut each sandwich in half and serve.
