Ingredients: 4 cups shredded potatoes. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Cooking spray.
Instructions: Preheat oven to 400F 200C. In a bowl, mix shredded potatoes, Parmesan cheese, olive oil, garlic powder, onion powder, salt, and pepper until well combined. Generously coat a muffin tin with cooking spray. Divide the potato mixture evenly among the muffin cups, pressing down firmly to form cups. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy. Allow the hash brown cups to cool slightly before carefully removing them from the muffin tin.
