Ingredients: 1.5 lbs beef stew meat, cubed. 1 onion, chopped. 3 carrots, sliced. 3 celery stalks, sliced. 2 cloves garlic, minced. 1 cup long-grain rice. 4 cups beef broth. 1 can diced tomatoes. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: Put the beef, onion, carrots, celery, and garlic in a slow cooker. Boil the tomatoes and chop them up. Then add the rice, beef broth, rosemary, salt, and pepper. Mix everything together by stirring. Take the lid off and set the temperature to low for 6 to 8 hours or high for 3 to 4 hours. The rice and beef should be soft. Enjoy while hot!
