Heat the mixture over medium heat, stirring occasionally, until it reaches a simmer. Remove from heat. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld. Once chilled, remove the vanilla bean from the mixture and discard. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the churned ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or until firm. Serve and enjoy!

Instructions: Put strawberries, raspberries, coconut cream, honey or maple syrup, and vanilla extract in a blender. Mix until it's smooth. Put the mixture into popsicle molds, leaving some room at the top for them to rise. Place a popsicle stick in each mold. Let it freeze for at least four hours, or until it's solid. Just run the molds under warm water for a second to get the popsicles out of the molds after they are frozen. Take the popsicles out of the molds, and if you want, you can decorate them by rolling them in shredded coconut. You can serve it right away or put it in an airtight container and put it in the freezer.
