Today’s lunch was a slice of this delicious Sweet-Savoury Vegetarian Quiche (slightly adapted from a @slowlyveggie recipe), and I served it with some salad on the side • Recipe {serves 4} 🧀🍎 Ingredients: 1 vegan puff pastry/200g comté cheese/80g pecan nuts/50g sultanas/4 organic eggs/1 sour-tasting apple/1 bunch of chives/20cl oat ‘cream’/2 tbsp mustard/salt, pepper 💪🏻👩🏻🍳 Directions: 1) Pour the sultanas into a bowl filled with hot water. 2) Spread the puff pastry on a baking sheet and place in a pie tin. Keep in the fridge. 3) Grate the 200g of comté cheese. Wash the apple, remove the pips and cut it into quarters and then into rather thin slices. Crush the pecan nuts. Chisel the bunch of chives. 4) In a bowl, beat the eggs with the oat ‘cream’, the mustard, and 3/4 of the chiseled bunch of chives. Add 100g of grated comté cheese, the apple slices, the crushed pecan nuts and the rehydrated & strained sultanas. Add salt and pepper to your taste. 5) Preheat the oven to 180°C. 6) Jab the puff pastry with a fork and pour in the cheese preparation. Sprinkle the rest of the grated comté cheese, and bake for about 35 minutes, until the quiche has browned a little.
