🔪 La cocina también quema por dentro
Nunca imaginé que colapsaría.
Últimamente me ha pegado la nostalgia, y revisar fotos del pasado me calma…
Me recuerda todo lo que he vivido.
Siempre me ha gustado la fotografía sin rostros, enfocada en los momentos.
Cosas que solo yo —y la otra persona— podemos identificar.
Y entre esas fotos, encontré las de mi burnout.
No voy a poner nombres. Ni del restaurante, ni del personal.
Pero jamás pensé que no encajar doliera tanto.
Eran cocinas llenas de egresados de escuelas prestigiosas, con carrera y currículum.
¿Fue un sueño entrar ahí? Sí.
¿Pensé que sería fácil? No.
Pero tampoco esperaba el hate, la envidia… ni sentirme tan poca cosa.
Tal vez entré en el momento más “rockstar” del restaurante.
Era el número 45 de la lista de los 50 Best. Lo más cercano a una estrella Michelin.
Los chefs iban diario al Limantour. Llegaban aftereados, inhalaban antes, durante y después del servicio.
No me espantaba.
Yo ya me había fumado ese cigarro.
Pero el servicio era brutal.
Y con los comentarios denigrantes, se volvía peor.
Eso sin contar la intimidación…
Y justo cuando pensaba que nada podía joderme más, llegó esto:
—“¿Cuántos años llevas en esto?”, preguntaba el encargado del área.
—“Cinco años”, respondía, orgulloso.
—“¿Cinco años? ¿Eres el que más tiempo lleva cocinando y aún así eres lento, tonto, y no puedes con el servicio?”
Ahí se me cayó el rostro.
Prefería hacer producción.
Limpiar camarón, cortar camote, pelar papa, limpiar calamar…
Cualquier cosa era mejor que compartir área con alguno de ellos.
Aunque me arrastrara, aunque intentara caerles bien, aunque lo diera todo…
La respuesta siempre era la misma:
> “No me sirves.”

Pareciera que estamos destinados a vivir estas historias cada que quieres formar parte del fine dining.
No todos fueron malos, recuerdo un par de conocidos que me ayudaron mucho…
Pero no fue suficiente.
Tal vez, si me hubiera aguantado lo suficiente, pude haber sido uno de ellos…
Pero personalmente, en el fondo,
nunca voy a dejar que me convierta en "uno de ellos".
Hoy sé que ese infierno no fue en vano.
Me dejó claro qué tipo de cocina —y de persona— quiero ser.
