This year I drank my first #Eggnog! Which I learned if done the right way can be pretty silky and amazing! #Tresleches Cake is on my baking bucket list. So I have always had a list of foods that I'am, let's say, intimidated to make/bake whatever the case may be. For whatever reason, it could even be a technique or an ingredient that I come across while reading through a recipe and immediately I move on...fresh artichokes, all the trimming etc, Next! Pie dough (any kind of dough for that matter).It use to be "stiff peaks" that would make me cringe (no longer)π.I know, I know, this sounds silly to most of you, or lazy. It's just food, right? But I overthink everything and get in my own way. So it's a little personal;) Either way it holds me back. I've taught myself how to cook most of what I know, but I feel like I'm cooking recipes and skipping the true techniques, if you will. I just watched Cooked~Michael Pollans documentary on Netflix and it really got me thinking and inspired me. So as simple as it sounds it's sort of a personal feat of mine, I'm going to start conquering my list. One thing at a time. Put the laziness and impatience aside and truly read up on some of these things and get organized and make each thing, several times until I'm completely cozy with it and comfortable. Then, I'll mark it off and move on to the next. I'm pretty excited about it. I'm starting with Beef Stew. I found a recipe that seems like a good solid base. I'll branch out from there and make it my own once I work it out. No crock pot, just good old fashioned braising method. If you have any good tips or recipes feel free to comment.
