Chou fleur rĂ´ti au citron, polenta crĂŠmeuse
Recettes de Anna Jones (pour le chou fleur) et de Papilles et Pupilles (pour la polenta). Un beau plat complet, pour deux personnes.
Chou-fleur 1 petit chou-fleur 2 cĂ s de câpres 1 citron bio entier 2 cĂ s de câpres Sel, poivre Huile dâolive
Polenta 100 g de polenta fine ÂŤÂ express  15 + 15 g de beurre 300 ml dâeau 200 ml de crème liquide (ou de lait pour une version plus lĂŠgère) 1 pincĂŠe de sel 1 pincĂŠe de poivre 15 g de beurre
Pour servir : quelques feuilles de persil plat
PrÊchauffer le four à 170°C (chaleur tournante).
Parer et dĂŠcouper le chou fleur en fleurettes. Les feuilles en bon ĂŠtat se conservent ĂŠgalement. Les disposer sur une grande plaque de cuisson. Couper un des deux citrons en rondelles et les rĂŠpartir avec le chou fleur. Arroser dâhuile dâolive, de sel et de poivre, mĂŠlanger avec les mains. Enfourner pour 15-20 min jusquâĂ ce que les fleurettes soient cuites et que le citron ait commencĂŠ Ă caramĂŠliser. Sortir du four, mĂŠlanger et ajouter les câpres en les rĂŠpartissant bien. Enfourner Ă nouveau pour 10 min, jusquâĂ ce que tout soit bien colorĂŠ.
Pendant ce temps, faire fondre 15 g de beurre dans une casserole Ă feu doux. Verser la polenta dans la casserole, bien mĂŠlanger et laisser roussir une trentaine de secondes. Ajoutez lâeau et la crème et laisser cuire en mĂŠlangeant constamment au fouet pendant au moins 10 minutes jusquâĂ ce que la polenta se dĂŠcolle des parois de la casserole. Ajouter le sel et les 15 g de beurre restants. MĂŠlanger et servir immĂŠdiatement dans deux assiettes, en disposant le chou-fleur sur le dessus, avec un dernier tour de moulin Ă poivre et des feuilles de persil.
