These buttery and fragrant Chai Shortbread Cookies melt in your mouth! These cookies, infused with chai tea and warm spices, are ideal for a cozy treat.
Ingredients: 1 cup butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1 teaspoon chai tea leaves from tea bags or loose. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground cardamom. 1/8 teaspoon ground ginger. A pinch of ground cloves. A pinch of salt.
Instructions: In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the chai tea leaves, ground cinnamon, ground cardamom, ground ginger, ground cloves, and a pinch of salt to the butter-sugar mixture. Mix well to incorporate the spices evenly. Gradually add the all-purpose flour to the mixture, mixing until a smooth dough forms. Be careful not to overmix. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for about 30 minutes to firm up. Preheat your oven to 350F 175C. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use cookie cutters to cut out your desired shapes and transfer the cookies to a baking sheet lined with parchment paper. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges of the cookies are lightly golden. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Optional: Dust the cooled cookies with a sprinkle of powdered sugar or a mixture of powdered sugar and chai spice for extra flavor and presentation. Enjoy these buttery and fragrant Chai Shortbread Cookies with your favorite cup of tea or coffee!

These Soft Chai Snickerdoodle Cookies are a delectable twist on classic snickerdoodles that have been infused with warm chai spices. They're soft and chewy, and go great with a cup of tea or coffee.
Ingredients: 1 cup unsalted butter, softened. 1 and 1/2 cups granulated sugar. 1 large egg. 2 and 3/4 cups all-purpose flour. 2 teaspoons cream of tartar. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground cardamom. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. For rolling: 1/4 cup granulated sugar, 1 teaspoon ground cinnamon.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper on baking sheets. Melt the butter and mix it with 1 1/2 cups of sugar in a large bowl until the mixture is light and fluffy. Mix the egg in well by beating it in. Put the baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg in a different bowl and mix them together with a whisk. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. In a small bowl, mix together 1 teaspoon of ground cinnamon and 1/4 cup of granulated sugar. This will be used for rolling. Take about two tablespoons of cookie dough and shape it into a ball. Cover the ball completely with the cinnamon-sugar mix by rolling it in it. Place the cookie dough balls with the coatings on the baking sheets that have been prepared, leaving some space between them so that they can spread out. Put it in an oven that is already hot and bake it for 8 to 10 minutes, or until the edges are lightly golden and the middle is still soft. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way down.
