Ingredients: 1 cup polenta. 4 cups water. 1 pound ground beef or meat substitute. 1 onion, chopped. 2 cloves garlic, minced. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz diced tomatoes. 1 cup corn kernels. 1 tablespoon taco seasoning. 1/2 teaspoon chili powder. 1/2 teaspoon cayenne pepper adjust to taste. Salt and pepper to taste. 1 cup shredded cheddar cheese. 1/2 cup chopped fresh cilantro. Sour cream and salsa for serving.
Instructions: Preheat your oven to 375F 190C. In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in the polenta and reduce the heat to low. Cook, stirring frequently, for about 15-20 minutes or until the polenta thickens and is tender. Remove from heat. In a large skillet, cook the ground beef or meat substitute over medium-high heat until browned. Add chopped onion and minced garlic and cook for another 2-3 minutes until the onion becomes translucent. Stir in the black beans, diced tomatoes, corn kernels, taco seasoning, chili powder, cayenne pepper, salt, and pepper. Simmer for about 5-7 minutes, allowing the flavors to meld together. In a greased 9x13-inch baking dish, spread half of the cooked polenta evenly on the bottom. Top with half of the beef mixture and half of the shredded cheddar cheese. Repeat the layers with the remaining polenta, beef mixture, and cheese. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly, and the casserole is heated through.
