Ingredients: 1 cup all-purpose flour. 1/2 cup vegan butter, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup vegan chocolate chips. 12 vegan caramel candies.
Instructions: Preheat the oven to 350F 175C. Line a baking sheet with parchment paper. In a mixing bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until well combined. Add the unsweetened applesauce and vanilla extract to the butter-sugar mixture, and mix until smooth. Sift in the all-purpose flour, baking soda, and salt. Mix until just combined. Fold in the vegan chocolate chips. Scoop about 1 tablespoon of cookie dough and flatten it in your palm. Place a vegan caramel candy in the center and fold the dough around it, forming a ball. Repeat for all cookies. Place the stuffed cookie dough balls on the prepared baking sheet, leaving space between them. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
