Instructions: Preheat the oven to 375F 190C. In a bowl, mix together brown sugar, soy sauce, Dijon mustard, olive oil, minced garlic, dried thyme, salt, and pepper. Place the pork loin in a baking dish and coat it with the caramelizing mixture, ensuring an even layer. Roast in the preheated oven for 30-40 minutes or until the internal temperature reaches 145F 63C for medium doneness. Baste the pork with the caramelized sauce every 10-15 minutes during cooking.
