One of the delicacies that the Bacolodnon’s pride is the Cansi. It’s an everyday comfort meal of the locals and it has no seasons as same to Special Batchoy of Super Batchoy House in Locsin Street. A steaming bowl of Cansi from Sharyn’s or Eron’s Cansi House is sufficient to satisfy every palate.
My buddies and I decide upon Eron’s Cansi House considering the fact that they’ve unlimited broth (sabaw) and plus delivered to their hospitality although Sharyn’s Cansi House takes the thirty second spot for the duration of The World Street Food Congress (WSFC) last 2017.
Most of them used carabao meat because it’s most locally available but still tender because they commenced to cook from three or four o’clock within the morning using wood. It’s a gradual put together recipe processed for 3-4 hours.
Their recipe is purely beef shank and meat and without a vegetable, but I found out from my own family that to thicken a little the broth and to have a wonderful and incredible taste, simply include a bisol.

Warning: Beware of your “LDL cholesterol” (bad cholesterol) first seeing that this recipe may be very rich.
Ingredients:
1 kilo – Beef shank with bone marrow
3 pcs. – Medium onions sliced
5 cloves – garlic, minced
1 stalk – lemon grass or tanglad (bundled)
8 pcs. – Medium batuan fruit
2 tbps – Annato seeds (Atsuete)
4 pcs. – Long pepper (Papaitan)
2 stalks – Spring onions
1 pc. – medium bisol – 1 inch cubed (to thicken the broth)
Seasoning
1 tsp. – Fish sauce
1 tsp. – Oyster Sauce
1 tsp. – Sugar
Salt and pepper to taste
Instructions:
Combine beef shank, garlic, onions, fish sauce, oyster sauce, spring onions, bisol, sugar and add water just enough to cover the meat. Leave it to boil for approximately 1-2 hours or until the beef is tender.
Take out the scum that’s floating on the top.
Prepare annatto seeds in small bowl by adding some broth and set aside
Add water again to cover the meat. Let it boil and add tanglad, batuan fruit, and long pepper
Cook for another 10 minutes and add prepared annatto seeds, salt and pepper to taste.
Recommended: It’s good to cook by using wood or charcoal.

Sinigang na Bulalo (Cansi)
Cansi is a famous beef soup dish of Iloilo and Bacolod. It is suppose to be the combination of two well known Filipino dishes, beef bulalo (beef shank with marrow soup) and beef sinigang (beef in sour broth).
