Decided I would give @blueapron a run. I made a couple #vegan adjustments to their Sweet Potato Tempura Bao with Bok Choy and Apple Salad. I chose to not fry the sweet potato, and cook them in the air fryer sans the tempura. And I used #cashewmayo instead of the mayo that came with the kit, which has eggs in it. I have a spiritual taboo that forbids me to eat green apples, so I replaced it with a #pinklady apple and gave the #GrannySmith apple from the kit to the chickens. I chose to julienne the #boychoy and slice the #radishes with a mandolin, different from the recipe directions. Otherwise, this was a great dish! I only ate one #steambun though.
