Ingredients: 2 medium-sized beets, peeled and grated. 1 cup almond flour. 1/4 cup grated Parmesan cheese. 1 egg. 1/2 teaspoon dried oregano. 1/2 teaspoon garlic powder. Salt and black pepper to taste. 1/2 cup tomato sauce. 1 1/2 cups shredded mozzarella cheese. 1/2 red bell pepper, thinly sliced. 1/2 yellow bell pepper, thinly sliced. 1/2 red onion, thinly sliced. 1/4 cup fresh basil leaves, torn. Olive oil for drizzling.
Instructions: Preheat your oven to 400F 200C. In a large bowl, combine the grated beets, almond flour, grated Parmesan cheese, egg, dried oregano, garlic powder, salt, and black pepper. Mix well until you have a dough-like consistency. Place a piece of parchment paper on a baking sheet and transfer the beet crust mixture onto it. Use your hands to flatten and shape the mixture into a round pizza crust, about 1/4 inch thick. Bake the beet crust in the preheated oven for 20-25 minutes or until it becomes firm and slightly crispy around the edges. Remove the beet crust from the oven and spread the tomato sauce evenly over the crust, leaving a small border around the edges for the crust. Sprinkle the shredded mozzarella cheese over the tomato sauce and then arrange the sliced red and yellow bell peppers and red onion on top. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the vegetables are tender. Once the pizza is done, remove it from the oven and sprinkle torn fresh basil leaves on top. Drizzle with a bit of olive oil for added flavor and shine.
