I had a great time cutting this beautiful rib subprimal at the @newyorkbeefcouncil's Cut & Carve event. As you can see, instead of just slicing this into boneless rib eye steaks and making one dish, we separated out the various muscles so that we could use them for different delicious, nutrient-dense preparations. The cap was seared in sesame oil and served in lettuce cup appetizers, and the eye was rubbed with pesto and roasted for the main course. I can't wait to do this for Christmas Eve dinner with my family! The other muscles are perfect for stir fry dishes and grilling, and the trim can always be ground up for burgers.
