Gildas con atun (anchovies, tuna, peppers) is a perfect bar snack: savory, acidic, convenient... delicious. My family immigrated from Italy and the Basque Lands. The Italian is easily accessible. My Nonna made sure we had ties to Italian cuisine, which has made me SUCH a food snob. We do some Basque dishes, but are more removed from it since my ancestors moved to California in the early 1800s. We do paella and the wines, but the rest has been lost. So I’m doing what I do: reading, researching, trying to get a good grasp of the flavor. I have beef roasts in my instant pot with a traditional Basque wine marinade cooking right now.
