This Tomato Basil Soup is comforting and tasty, with the richness of tomatoes and the fragrant essence of fresh basil. Great for a warm meal on a cold day.
Ingredients: 4 cups tomatoes, diced. 1/4 cup fresh basil leaves, chopped. 1 onion, finely chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1/2 cup heavy cream. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, saut until onions are translucent. Add diced tomatoes and cook for 5 minutes, stirring occasionally. Pour in vegetable broth and bring the mixture to a boil. Reduce heat, cover, and let it simmer for 15-20 minutes. Use an immersion blender to puree the soup until smooth. Stir in chopped basil leaves and heavy cream. Season with salt and pepper to taste. Simmer for an additional 5 minutes. Serve hot, garnished with additional basil leaves if desired.
