So in the end, I was asked to bring cookies instead as someone is already planning a mango cheesecake.
Since I'll bake up a double recipe in the wee hours of Tuesday morning before I go to bed, I decided to prep the chocolate chunks first because I chop them by hand... Well heavy knife and a fork because that way I don't melt the chocolate all over my hands and the board.
I had some 83g of 43% chocolate so I added some of my precious 70% chocolate to get close to 180g, and chopped them up unevenly because I like the texture that way!
Also, I'm a slow knife user because I have terrible concentration and attention span which is not great when handling sharp tools which is why I prepped this up early the day before just to make my life easier.

Christmas cookies!
I just mixed up a batch of gingerbread dough for the first round Christmas with my parents and brother tomorrow. It has to chill to re-solidify the butter (so much butter), so it’s hanging out in the fridge for the night. Baking time tomorrow! I haven’t made these cookies in a while, I’m excited!
