I really wanted something that's a cross between biryani and maybe a risotto but without the heavy starch and maybe a soup but not quite ? and then I remembered watching a video on jollof rice and I was like I've never made that before but it's aromatics and veg and meat and then stock and then you toss your rice in and then cover for 20 minutes yeah? Well I've got the stuff for curry..... And some bacon and a chicken breast.... And bring SEAsian there's always rice...
Cue me clutching about 8 bottles of spices and then pouring them out according to some arcane knowledge, then later guesstimating the amount of washed rice to liquid and coming up 98% accurate.
I gotta say, I should have stirred in a pat of butter to elevate it while still hot and maybe leave it on the fire lid off for another 2 minutes to get rid of the liquid completely but I don't mind the moisture and it was fucking delicious and I didn't have to boil rice separately and it's just medium grain rice and omg imagine stirring in some cheese.
Faux hot cross buns because bread Jesus would freak out mother

Now, hear me out
*pours boiling hot water into 1 cup sized vessel of choice then pours said water into small pot*
*throws in several squares of quality chocolate, pinch of fancy salt, and half a teaspoon of good cocoa powder*
*turns on medium heat and stir well; adds in a slightly heaped quarter teaspoon of agar powder and stirs really really damn well and good, then brings mixture up to a roiling boil for a minute with continuous stirring*
*takes off heat and pours into vessel which then gets popped into the fridge to set for at least an hour*
And then tada you get quality chocolate agar jelly! With less smearing!
Edit: QUARTER! QUARTER! I MEANT TO SAY 1/4 TEASPOON SLIGHTLY HEAPED AGAR POWDER
Bringing back the 2am baking tag cause I couldn't sleep but I had a craving
Chicken ham and cheese singles buns, featuring a cheesplosion despite best efforts.
It took 20 years since I first tried to make pizza during a time of nothing but Pizza Hut, no internet and limited cooking shows on the only 4 tv channels we had (slice of bread, tomato paste, sliced chicken sausage, cheese single, and a very aggravated stomach afterwards) I finally achieved pizza! The crust is a little overdone because my countertop oven doesn't go as high as most recipes demand but here's my first successful pizza, a garlic bechamel sauce with thinly sliced potatoes and sharp cheddar!
