Ingredients: 1 lb ground beef. 1 small onion, chopped. 1 packet taco seasoning. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 cup salsa. 2 cups shredded cheddar cheese. 6 small flour tortillas.
Instructions: Preheat your oven to 375F 190C. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Stir in the taco seasoning, black beans, corn, and salsa. Simmer for 5 minutes. Place 2 tortillas in the bottom of a greased 9x13-inch baking dish, overlapping as needed. Spread half of the beef mixture over the tortillas and top with half of the shredded cheese. Repeat the layers with the remaining tortillas, beef mixture, and cheese. Bake in the preheated oven for 20-25 minutes or until the casserole is heated through and the cheese is melted and bubbly. Serve hot, garnished with your favorite taco toppings.
