Stuffed Tacos Adding bell peppers to tacos makes them healthier and tastier. Ground meat, rice, black beans, corn, and taco seasoning are mixed together and then stuffed into bell peppers. The peppers are then baked until they are soft and cheese melts on top. These tacos are a hit with everyone, and this dish is a great way to enjoy all the flavors without the carbs.
Ingredients: 4 large bell peppers, any color. 1 lb ground beef or ground turkey. 1 small onion, diced. 2 cloves garlic, minced. 1 cup cooked rice. 1 cup black beans, drained and rinsed. 1 cup corn kernels frozen or fresh. 1 cup diced tomatoes. 1 cup shredded cheddar cheese. 1 packet taco seasoning mix. 1/2 cup water. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: Preheat your oven to 375F 190C. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside. In a large skillet, brown the ground beef or turkey over medium heat. Drain any excess fat. Add the diced onion and minced garlic to the skillet with the meat. Saut for a few minutes until the onion is translucent. Stir in the cooked rice, black beans, corn, diced tomatoes, and taco seasoning mix. Add 1/2 cup of water and simmer for 5-7 minutes until the mixture is heated through and well combined. Season with salt and pepper to taste. Stuff each bell pepper with the meat and rice mixture, packing it in tightly. Place the stuffed peppers in a baking dish. Sprinkle shredded cheddar cheese on top of each stuffed pepper. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender. Remove the foil and bake for an additional 5-10 minutes until the cheese is melted and bubbly. Garnish with fresh cilantro leaves before serving. Enjoy your delicious Taco Stuffed Bell Peppers!
