Ingredients: 2 boneless, skinless chicken breasts, cooked and shredded. 1 ripe avocado, mashed. 1/4 cup Greek yogurt. 1 tablespoon lime juice. Salt and pepper to taste. 2 large cucumbers, thinly sliced lengthwise. 1/2 red bell pepper, thinly sliced. 1/4 cup fresh cilantro leaves. 1/4 cup shredded carrots.
Instructions: Shred the chicken and mix it with the mashed avocado, Greek yogurt, lime juice, salt, and pepper in a bowl until everything is well mixed. Spread out the cucumber slices on a clean surface. Put some of the chicken and avocado mix on top of each cucumber slice. On top, put chopped red bell pepper, cilantro leaves, and carrot shreds.
