For the salad: 1 English cucumber or 2 Japanese cucumbers, julienned 2 celery stalks, julienned 1/4 red onion, julienned Half of a leftover chicken breast, shredded.
For the dressing: 2 tbsp almond butter, Juice from half of a lemon, 1 tsp of fish sauce, 1 tsp of Asian spicy bean paste or chili oil 1/2-1 tsp of honey or maple syrup pinch salt and pepper.
