The outside of these roasted smashed new potatoes is crispy, and the inside is fluffy. They taste great with garlic and herbs.
Ingredients: 1.5 lbs new potatoes. 2 tablespoons olive oil. 2 cloves garlic, minced. Salt and pepper to taste. Fresh herbs such as rosemary or thyme, chopped.
Instructions: Preheat the oven to 425F 220C. Boil the new potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain the potatoes and place them on a baking sheet lined with parchment paper. Using a fork or potato masher, gently smash each potato until flattened but still intact. In a small bowl, mix together olive oil, minced garlic, salt, and pepper. Drizzle the olive oil mixture over the smashed potatoes, making sure each one is well coated. Sprinkle chopped fresh herbs over the potatoes. Roast in the preheated oven for 25-30 minutes, or until the potatoes are crispy and golden brown. Serve hot, garnished with additional fresh herbs if desired.
