Asian Style Potato Salad In separate pots, boil peeled and cut up potatoes, carrot chunks and frozen peas. Hard-boil eggs and peel off shells when done. Drain and mash soft potatoes. Add carrots, peas, cubed up eggs, cubed up cooked ham. Add Kewpie mayo and mix. Add sugar as desired.

Chinese Beef Noodle Soup - Red Version
Ingredients: 1-2 beef shanks (it really looks like a whole muscle), ginger, tomato paste, cooking oil, ba1 jiao3 (star anise but the one with 8 points), hua1 jiao1 (those peppercorn things), soy sauce, water -cut up the beef shank against the muscle fibers -heat up oil in pot -brown beef chunks in oil -add small can tomato paste, smother the chunks in it -add water -add soy sauce -add ginger -place 3 anise and small! handful of peppercorns in a overlapped pouch made of layers of cheesecloth, tie off package with string -add spice packet to broth -simmer on low for 2-6 hours, depending on how long it takes to tenderize meat *note: NEVER ADD SALT, IT MAKES IT BITTER WHEN MIXED WITH THE SPICES IN THIS COMBINATION

Chinese Cold Noodles
Meat:
-chicken or pork cut into small strips, marinate with soy sauce, sesame oil, sugar, rice wine (optional), corn starch
-cube up marinated dried tofu
-stir fry meat and tofu together in wok with heated cooking oil
-refrigerate after done
Cucumber: get the small ones, wash and cube
Sauce:
-peanut butter (this one was with almond butter though, my roomie has peanut allergies)
-hot water
-soy sauce
-sugar
-black vinegar
Noodles: I buy the vacuum sealed fresh ones at the store, boil them, drain, rinse with cold water, drain

Chocolate Covered Strawberries for Mother's Day Melt down semi-sweet chocolate in a double boiler (bowl over boiling pot of water), add splash of cream or flavoring or liquor here as desired Wash strawberries, dry with paper towel Dip into chocolate, place on wax paper Put into fridge to let chocolate harden

Chinese homemade dumplings Nappa cabbage, wash and chop Nira chives, wash and chop Ground pork, 1 pound Shrimp, 1/2 pound minced Soy sauce, sesame oil Prepare ingredients: After chopping the nappa, salt it lightly. This draws out the water. Then squeeze/press the water out of the cabbage. I just use my hands. Use a large bowl to combine the ingredients. Only mix in one direction. I don't know why but I don't mess with the family recipe. Wrap your dumplings with wrappers and warm water to seal. We used some spinach wrappers this time. Cooking: Boil water. Add dumplings. Make sure they don't sink and get stuck to the bottom. Add cold water when pot boils-3 times. When the dumplings float, they're done.
Eggs Two Ways
It's getting late in the term, which means fast-food. Top photo is Scrambled Eggs with Tomatoes. Not very difficult. Make scrambled eggs, remove them when they are almost done, stir-fry tomato chunks. Then add the eggs back in. Add sugar and salt. My family's version is slightly sweeter = more sugar.Â
Second photo is of Dried Radish Omelette. As you are scrambling the eggs, add some dried radish. It's found in some Asian food stores. I like buying the packs that are already cut up since that's one more step I don't have to do. Careful with how much you add, cause it's pretty salty. Then fry up the eggs. Poor the egg mixture in the pan at medium heat. Don't move it too much. And then use the spatula to divide the egg into four for easy flipping.
Opo Squash
It looks like that. Yes, I remember my dad once being asked in the store about how you cook one of these. He gave the correct instructions but forgot to tell the poor soul that you need to peel the skin off first. A normal vegetable peeler will work.Â
The seeds are edible so you don't have to remove them. You can then stir-fry the chunks with vegetable oil and sakura-ebi (those tiny dried shrimp). My variation is on the bottom right. I add just a teaspoon of Indian Onion Pickle. It actually flavors the vegetable really well. If not, then just add salt and water and let it steam 'til soft.

Lunchtime Idea:
Pork Spareribs with Sweet Soy Glaze and Broccoli
Cook spareribs on medium heat. Then add 1/4 cup soy sauce and 2 tablespoons sugar. Allow sugar to caramelize. Â
Cut up broccoli crowns. Cook with vegetable oil. Once all the pieces have touched hot oil, add water and finish by steaming....add salt to taste.
Serve over rice!

Homemade chocolates!
I took 16 oz of semi-sweet baker's chocolate and melted it in a bowl over a double-boiler. Then I added about 1 cup of heavy whipping cream! When it was all melted, I poured it into some small heart shaped pans (for my mentees) and then poured the rest into a lined baking sheet. Then into the fridge! At about half an hour in the fridge the chocolate is "just solid enough" that you can use cookie cutters or in my case, bento shape cutters and make cute shapes with the chocolate! Then back into the fridge to finish hardening....
Stir-fried Chinese Eggplant Ingredients: 2 Chinese eggplant, sliced into 1/4 inch discs 1 tablespoon minced garlic 1 tablespoon minced ginger 1/4 cup Vegetable oil - might need to use water too if the eggplant soaks up moisture too fast 2 tablespoons Soy sauce 1 tablespoon Black vinegar 1 tablespoon Sugar
CrAzy Combination Comfort Food
It's 11 at night, tired from studying, 28 degrees Fahrenheit outside, and hungry.....time for something easy, fast, and weird.
In the bowl is actually Kraft Mac n Cheese, SPAM, and Kimchi. Follow the instructions on the box to make the mac n cheese. While it's bowling, cube up a quarter to a half a can of SPAM into little 1/2 inch cubes. Add to the mac n cheese which should still be hot. Eat with your favorite Korean Kimchi.
Other variations:
healthy-er...?: boil up broccoli crowns to add to the finished mac n cheese
saltier: try with soy sauce.....my roommate says it's good.....
why kimchi?: uhm....lived with a Korean roommate, had no other vegetables, found out cheese and the sour, bright, spicy, acidity of the kimchi go well together.....

Five Spice Pork Chops
Ingredients:
Pork Loin Chops, cut about 1/4 to 1/2 inch thick
Soy sauce
Sugar
Sesame Oil
Five Spice Powder
garlic (optional)
Cooking: I usually have a bowl of this meat marinating in the fridge at all times cause it's so fast and so easy. Probable measurements are about 1/4 cup soy sauce, 3 tablespoons sugar, 1 tablespoon sesame oil, and liberal amount of five spice powder. There's a good tablespoon there, I think.
Heat up your frying pan. Add vegetable oil or nonstick cooking spray. Add marinated pork chops. Cook each side for like 3-4 minutes and they should be done. Since this is home cooking, you cut the pieces to check...
Chinese Char Siu Chicken (works w/ Pork too)
Ingredients:
1 package chicken drumsticks (the one I buy has 5 per package)
1 package Char Siu Spice Mix (I use Noh brand)
Soy sauce
Sugar
water
Step 1: Prepare the marinade. In a bowl big enough to submerge your chicken/meat, empty the package of the Char Siu powder. Now on the package, it probably says to add only water. DON'T DO THAT! The flavor will be dull. First add about 1/4 cup sugar. Then add soy sauce, about 1/3 cup should be okay. As a note, I don't measure anything....so my measurements here are just based on visual experience/guesstimates. Now add 2 cups hot water to dissolve the crystals of sugar and spice mix. Mix your marinade together. Place meat evenly into the bowl. Let it marinate in the fridge for a 3-4 days. I don't make enough marinade to cover the meat entirely so I flip all the meat over during marinating time.
Step 2: Baking...I take the meat and use a pie pan to bake them in. 350 degree oven for like 45 minutes is usually good......Stab meat with a chopstick. If it doesn't bleed anymore, when stabbed through the thickest part, it is done!
